Makin' Whoopie

Valentine's Day is all about the whoopie... but there are lots of ways to make love, and these cookies are just one of the best. What is there left to say except pull back the sheets baby...

Whoopie Pies
Cookies
Cookie recipe from Macheesmo
2 sticks butter
2 cups brown sugar
Cream together several minutes until light and fluffy
Add
2 teaspoons vanilla
2 eggs
Mix until just incorporated

Sift
4 cups all-purpose flour
1 cup cocoa powder
2 ½ teaspoons baking soda
2 teaspoons salt
Add alternately with 2 cups buttermilk
Mix just until combined
Let dough rest for 10 minutes
Spoon even sized dollops onto baking sheet
Leave space between each dollop and use fingers to round out each cookie round
Bake at F350°, 10-15 minutes until cakey
Transfer to wire rack to cool
Frost when cooled

You can fill your cookies with any type or flavor of frosting, but you want to make sure that it is thick enough to hold it's shape. I opted for pink vanilla, and chocolate dipped in white chocolate and peppermint.

Frosting
2 cups powdered sugar
1 stick butter
6oz. sweetened condensed milk
1 teaspoon vanilla
Red food dye until desired pink color is reached

Chocolate Frosting
Same as above, plus ¼ cup cocoa powder (more or less depending on flavor)
Dip chocolate filled whoopie pies halfway in melted Peppermint Hershey's Kisses

  2. OH I love Whoopie Pies! Yum-o! I hadn't had them FOREVER until I bought some at a Farmer's Market in Cheyenne. After that, I went crazy making them. Yours are adorable. :)

  7. These look great and will be trying them but instead of food colouring use grenadine. It will give a great pink colour to your frosting :)
