Lady In Red

A few days ago, Gabriel and I were in the grocery store when Chris De Burgh's Lady in Red came on over the loud speaker.

As customary Gabriel began changing to the lyrics to silliness. I responded: "You are defacing the most romantic song ever written."

He questioned: "It is? The most romantic ever?"

I laughed, "Well, for 8th graders anyway!"

Seriously, who didn't love this song as an 8th grader? You know you did. This song always makes me think of Valentine's day. Valentine's Day isn't just for couples, it's for spending time with, thinking of, and giving to all the people you love in your life; parents, children, siblings, friends, neighbors, pets, and significant others, so even if you don't have a special someone this year in the traditional sense, you've surely got plenty of special someone's-plural.

Red Velvet Cupcakes

These yummy cupcakes have an excellent mute flavor, yet are super moist, and when paired with such a delicious frosting become the ultimate in Valentine's Day treats, perfect to give to, and enjoy with all the special someone's in your life.

I didn't like the fact that in every recipe I looked at these cupcakes had so little chocolate in them. Since we like to keep it non-traditional over here at Fahrenheit 350°, I made sure to include plenty more than the traditional 1 teaspoon - ¼ cup most recipes call for; naturally, this makes for a more chocolaty cupcake color.

Cake
1 ½ cups canola oil
1 ½ cups sugar
4 eggs
Cream together until thick and fluffy

Add
¾ cocoa powder
1 ¾ cup flour
1 teaspoon baking soda
½ teaspoon salt
Stir until wet ingredients are incorporated

Add
1 teaspoon vanilla
1 teaspoon vinegar
1 cup buttermilk
1 bottle red liquid food coloring
Mix together until smooth


Fill cupcake liners ½ full
Bake at F350°, 15-17 minutes
Cool top side up on wire rack
When completely cooled, frost and decorate
Yields 24-28 cupcakes

Frosting
8oz. cream cheese
1 stick butter
2-3 cups powdered sugar
1 teaspoon vanilla
2-3 drops of milk
Mix together until smooth and spreadable

  1. Mmm...red velvet is always a hit around here! That cream cheese frosting looks delicious, piled high and ready for licking! :) YuM! I like how you used a good deal of cocoa powder in your cupcake; my sister never understood what "flavor" red velvet is supposed to be because it usually has so little cocoa. Great job!

  9. They look delicious girly. I'm usually too lazy to make them and just pick up a couple at whole foods. Have you had em'? Delish! I'm not sure how they make their frosting (I think maybe over the stove first) but it's amazing.
